With the hubbub of the Thanksgiving holiday behind us, it’s just about time for a drink. This month we’ve been focusing our recipes around pear pairings, and what better to use for a spirit recipe than Clear Creek Distillery’s Pear Brandy. One of the first craft distilleries in the U.S., Clear Creek makes fruit based spirits right out of the Pacific Northwest, and they look real good doing it.
Built margarita-style, this recipe calls to mind the crisp flavors of cold weather, with pear and rosemary alluding to that so-called Christmas cheer. We used mezcal, accentuated with a (optional) half-rim of cherrywood smoked Jacobsen Salt, to add a clean smokiness alongside these cool, winter flavors.
¾ oz Pear Brandy
1 ½ oz Mezcal (we used Del Maguey Vida)
¾ oz lime juice
¾ oz simple
3 dashes orange bitters
Gently muddle rosemary
Shake and strain into a coupe, with or without a smoked salt rim
Enjoy your house not full of relatives for the time being.
